Baking

I have been baking different breads over the last few days. Today, I made an Apricot-Date Tea Loaf. It's really yummy and quick to make. My family loves it.

Here is the recipe:

1 cup dried apricots
1/2 cup dates
2 cups unbleached white flour
2 tsp baking powder
1/4 tsp baking soda
1 tsp salt
1 cup sugar
2 Tbsp melted butter
1 large egg
1/2 cup orange juice
1/3 cup water
1/2 cup ground almonds

Cover apricots with 1 1/2 cups warm water. Let them soak approximately 30 minutes. Drain and cut into fine pieces.
Heat oven to 350 degrees. Butter and flour an 81/2” x 41/2” loaf pan (or line with baking paper).
Sift flour, baking soda, baking powder and salt in a medium size mixing bowl.
In another bowl, combine the sugar, butter, egg, 1/3 cup water and orange juice.
When well mixed, add the apricots, dates and almond meal. Mix and pour into pan.
Bake 55 to 60 minutes until lightly browned. Cool on wire rack.
